Origin - Huila San Adolfo

These coffees undergo a meticulous processing method, beginning with a pre-fermentation stage of 24 hours in plastic bags. This is followed by another 24-hour period where the cherries are left to ferment aerobically. After this, the cherries are depulped and subjected to a unique fermentation process. They are fermented alongside fruits that have been dehydrated and ground into a powder, enhancing the concentration of flavors. This fermentation takes place anaerobically over a period of five days. Finally, the coffee is dried mechanically for 10 days, with an additional 5-day resting period to further enhance and retain the flavors.


Brayan, a native of Acevedo, Huila, Colombia, hails from San Adolfo, a prominent coffee-growing area. Raised in a community where learning the virtues and skills of land cultivation is a tradition, Brayan was introduced to the intricacies of coffee farming by his father at the age of 13. This early education sparked a deep-seated passion for coffee, shaping his aspirations for the future. Recently, Brayan successfully launched a project involving over 60 coffee growers, including his family. They focus on collecting and selling their coffee cherries at better prices, overcoming the challenges of harvesting in difficult terrains. In collaboration with the Ancla milling station and forest conservation efforts, Brayan has been able to add value to their product by creating unique coffee profiles. He dreams of introducing San Adolfo Huila's coffee to the global market.
